Avocado Toast

Creamy mashed avocado on toasted multigrain bread with chili flakes, lemon and seeds.

    Toast 8 multigrain bread slices till golden and crisp.

    Halve, deseed and scoop 2 ripe avocados into a bowl. Mash coarsely with a fork.

    Add juice of 1 lemon, 1 tsp sea salt, 1 tsp crushed black pepper, 1 tsp chili flakes and 1 tbsp olive oil. Mix.

    Pile the mash thickly over each toast. Top with halved cherry tomatoes.

    Drizzle remaining olive oil and sprinkle sesame/pumpkin seeds and extra chili flakes.

    Serve immediately while toast is hot and crisp.
