Avocado Toast (Light Dinner)

Avocado toast topped with poached egg or feta, easy weeknight dinner.

    Toast 8 multigrain slices till crisp.

    Mash 2 avocados with juice of 1 lemon, salt, pepper, chili flakes and 1 tsp olive oil.

    Sauté sliced mushrooms in 1 tsp olive oil with garlic, salt and pepper for 3 mins.

  4. 4

    Spread mashed avocado on toast, layer mushrooms and cherry tomatoes on top.

  5. 5

    Crumble paneer/feta, sprinkle seeds and chili flakes.

  6. 6

    Serve with a light cucumber-tomato salad on the side.
