Corn-Cheese Paneer Sandwich

Grilled sandwich loaded with sweet corn, paneer and melty cheese.

    Boil 1 cup sweet corn 5 mins, drain and lightly crush half the kernels.

    Combine 200 g grated paneer, the corn, finely chopped onion and capsicum, 1 tsp chaat masala, 1 tsp black pepper and salt. Add 2 tbsp grated cheese to bind.

    Butter 8 bread slices on one side. Spread filling on 4 slices, top with remaining cheese, close with the other slices (butter facing out).

    Grill in a sandwich maker or tawa, pressing gently, until both sides are golden and cheese melts (4โ€“5 mins).

    Cut diagonally and serve hot with green chutney or ketchup.
