Moong Dal Khichdi + Papad + Curd

One-pot rice and dal khichdi with ghee, papad and curd.

    Wash 1 cup rice + 1 cup yellow moong dal together till water runs clear.

    Heat 2 tbsp ghee in a pressure cooker. Crackle 1 tsp cumin, add a pinch of hing.

    Add chopped ginger and green chili; add 1 chopped tomato, ¼ tsp turmeric and salt; cook 2 mins.

    Add the rice-dal and 5 cups water. Pressure cook 3 whistles for soft khichdi.

    Open once pressure releases. Top with 1 tsp ghee.

    Roast papads on flame; whisk curd with salt and roasted cumin. Serve khichdi with papad, curd and pickle.
