Masala Oats Lunch Bowl

A heartier version of masala oats with paneer and extra veggies.

    Heat 1 tbsp ghee, crackle 1 tsp cumin, add chopped onion, ginger-garlic and green chili.

    Add chopped tomato, mixed vegetables (carrot, beans, peas, capsicum), ½ tsp turmeric, 1 tsp pav-bhaji or garam masala and salt.

    Sauté 4 mins till veg are tender-crisp.

    Add 1.5 cups rolled oats, roast 1 min, then 4 cups hot water/veg stock.

    Cover and simmer 6 mins to a creamy bowl consistency.

    Top with chopped coriander, a swirl of curd and lemon. Serve as a one-bowl lunch.
