Mixed Veg Sabzi + Roti
Seasonal mixed vegetables in a light onion-tomato masala with soft phulkas.

Chop cauliflower, carrot, beans, potato into bite-size pieces; keep peas separate. Parboil hard veg 3 mins.

Heat 2 tbsp ghee, crackle 1 tsp cumin. Sauté chopped onion till translucent. Add 1 tbsp ginger-garlic paste; cook 30 sec.

Add chopped tomato, ½ tsp turmeric, 1 tsp coriander powder, 1 tsp chili powder and salt. Cook till mushy.

Add the veg, toss to coat. Add ½ cup water, cover and cook 10–12 mins till tender.

Sprinkle ½ tsp garam masala and chopped coriander. Toss.

Rotis: knead atta with water and 1 tsp oil; rest 20 mins. Roll thin and cook on tawa, puffing on flame. Brush with ghee.

Serve sabzi with hot rotis.
