Onion-Tomato Uthappam
Thick dosa batter pancake topped with onion, tomato and chilies, served with chutney.

Method

Use thick (slightly thicker than dosa) fermented idli/dosa batter. Stir gently; do not thin.

Combine finely chopped onion, tomato, green chili, coriander and a few curry leaves in a bowl. Add a pinch of salt.

Heat a tawa on medium. Pour a ladle of batter; spread to a small thick disc (do not thin out).

Immediately sprinkle a generous handful of the onion-tomato topping; press gently with the back of a ladle.

Drizzle ghee/oil around the edges and a few drops on top. Cover and cook 2 mins.

Flip and cook 1 min till topping is golden and base is crisp.

Serve hot with coconut chutney (and sambar if desired).
