Paneer Bhurji + Multigrain Toast

Scrambled paneer with onions, tomatoes and spices on toast.

    Heat 2 tbsp butter. Sauté 1 tsp cumin, then chopped onion, ginger-garlic and green chili till soft.

    Add chopped tomato, ½ tsp turmeric, 1 tsp red chili, 1 tsp coriander powder and salt. Cook till tomatoes break down.

    Crumble in 400 g paneer along with chopped capsicum. Stir 3 mins on medium heat.

    Sprinkle ½ tsp garam masala, ½ tsp kasuri methi and chopped coriander.

    Toast 8 multigrain bread slices, butter lightly.

    Pile bhurji over the toast and serve hot with a wedge of lemon.
