Quinoa Veg Khichdi
Quinoa cooked one-pot with moong dal and vegetables.

Ingredients

Rinse 1 cup quinoa and ½ cup yellow moong dal till water runs clear.

Heat 2 tbsp ghee in a pressure cooker. Crackle 1 tsp cumin, add hing, chopped ginger and green chili.

Add chopped onion, sauté 2 mins. Add tomato, mixed veg, ¼ tsp turmeric, 1 tsp coriander powder and salt.

Add quinoa-dal mix, stir 1 min. Pour in 4.5 cups water.

Pressure cook 2 whistles. Open after pressure releases naturally.

Drizzle 1 tsp ghee on top. Serve hot with curd and papad.
