Raw Banana Kofta + Jeera Rice

Spiced raw banana koftas in tomato gravy with cumin-tempered rice.

    Boil 4 raw bananas till tender; peel and mash.

    Mix mash with 3 tbsp besan, ginger-chili paste, ½ tsp red chili, ½ tsp garam masala, coriander and salt. Shape balls and shallow-fry till golden.

    Gravy: sauté 1 tsp cumin, chopped onion and ginger-garlic in 2 tbsp oil. Add tomato puree, ½ tsp turmeric, 1 tsp red chili, 1 tsp coriander powder, salt; cook till oil separates.

    Add 2 cups water, simmer 5 mins. Stir in 2 tbsp curd or cream and ½ tsp garam masala.

    Add koftas just before serving.

    Jeera rice: heat 1 tbsp ghee, crackle 1 tsp cumin and a bay leaf. Add 1.5 cups soaked basmati and 3 cups water with salt. Pressure cook 1 whistle. Fluff and serve with the kofta curry.
