Veg Pulao + Raita

Fragrant basmati pulao with mixed veggies, served with cucumber raita.

    Soak 1.5 cups basmati rice 20 mins; drain.

    Heat 2 tbsp ghee. Add 1 bay leaf, 4 cloves, 1" cinnamon, 4 green cardamoms and 1 tsp cumin.

    Add 1 sliced onion, sauté till golden. Add ginger-garlic and slit green chili.

    Add 2 cups mixed veg (carrot, beans, peas, cauliflower, potato). Sauté 3 mins. Add salt and ½ tsp garam masala.

    Add rice, gently toss 1 min. Pour 3 cups hot water plus chopped mint and coriander. Bring to boil.

    Cover, cook on low 12 mins till water absorbs. Rest 5 mins, fluff with fork.

    Raita: whisk 2 cups curd with grated cucumber, chopped tomato, onion, ½ tsp roasted cumin, salt and mint. Serve cold with the pulao.
