Vegetable Poha

Flattened rice tempered with mustard seeds, peanuts, peas and lemon.

    Rinse 2 cups thick poha in a colander till just soft. Drain, sprinkle ½ tsp salt and 1 tsp sugar, fluff and set aside.

    Heat 2 tbsp oil. Add 1 tsp mustard seeds, 1 tsp peanuts, curry leaves, green chili and chopped onion; sauté till translucent.

    Add diced potato, cover and cook 4 mins. Add green peas and ½ tsp turmeric.

    Tip in the poha; mix gently so colour coats every flake. Cover and steam on low 2 mins.

    Switch off, squeeze juice of ½ lemon and stir in chopped coriander.

    Serve hot with sev and a wedge of lemon.
